I've made a few batches of cider and its a big hit around here! I've only used Safale s-04, and like the end product but I have an abundance of Kolsch. What say you? Think it would be fine, or should I go out and my tried and true s-04

I say go for it! Ferment it at kolsch temps too, low & slow. I'm guessing, but I think it will give you a very tasty & interesting cider, with a bit of that floral/fruity-ness that kolsch beer has.
