I usually let all my Witbeers ferment for 21-22 days. (slowly raising the temperature)
I used Wyeast 3944 for the first time.
It's said to ferment slow.
However - I took a gravity reading after 22 days and my apparent attenuation is at 64% only.
There is also still a lot going on in my fermenter (Airlock activity)
I am thinking of just leaving it for one more week and then take another reading.
Anybody noticed something similar happening or was my yeast just tired due to age?
