Sometimes I brew specific styles, but more often than not I like experimenting. I used some harvested 3944 from a witbier in a red beer that had a small wheat percentage and it turned out pretty good. The witbier had a moderate banana/clove flavor/aroma, but in the red it was really restrained. I'm currently fermenting a Biere de Garde recipe I designed and pitched some of the harvested 3944 to see how it would turn out. The gravity sample I tried was pretty good, so I am optimistic.

Has anyone else used this strain in non-witbiers?
