I brewed a True Brew American Wheat last month but instead of the kit yeast I used White Labs WLP320. I thought this was supposed to have very little to no clove and banana aroma/flavor and I'd have an American Wheat. Instead my beer taste like a German Hefeweizen. Lots of banana and clove flavor and aroma. What's the deal?

What temp did you ferment at? Different yeasts have different esters at different temps. If you were over 70 then the yeast did right.

Fermentation temp was right at 70. I've read reviews of this strain that say they had ferm temps of 70 to 72 and have the desired results of no banana or clove notes.

I agree with onthekeg. Whitelabs' own website says to ferment wlp320 between 65 and 69. I personally do my hefes at 62 because I prefer clove over banana. Yeast is working as intended.
