Holy fermentation! I'm using a 1" blow off tube on my 14.5 gallon fermenter and I'm getting major blow off. Beers been fermenting now for about 18 hours. I'm using this yeast for the first time on a 10 gallon batch of my Hefewiezen. I made a 1/2 gallon yeast starter and and pitched at high krausen, fermentation started with in 4 hours. My ferm chamber is set to 62 degrees but the beer was right around 70 when I pitched and after checking the actual beer temp this morning it's at 73 (with the ferm chamber set to 62).

I'm concerned now that I'll have some acetone off flavors in my final beer. I was wondering what others here have noticed with this yeast strain at temps above 70. I Guess next time I'll chill a few more degrees and and lower the temp of my ferm chamber
