I have ingredients on hand to put a batch together-

10# Pilsner
1# Vienna
1 oz Saaz @60, 1oz each -Perle & Hallertau @ 15

I have Wyeast 1007 German Ale & White Labs 810 - SF Lager available in my fridge.

Probably would make a good Pilsner with regular lagering yeast, but really don't have the lagering capacity right now, and don;t feel like going that route with this.

Any opinions on the ingredients and which yeast would work better.
Thanks in advance for input.
 
The yeast doesn't really match the ingredients. I did a "fake" lager with that exact grain bill and all Saaz hops, used Safale 05, fermented low around 60-62, turned out to be a good solid summer beer.

That 1007 makes a great altbier if you get the grain bill for it.
If I had to pick one go with the 810.
