Brewday was yesterday- I was attempting to "clone" Green Flash IPA. This was my 5th brew- all partial mash with good to very good results.
What I did different/messed up:
-I used my new Blichmann 10gal kettle
-Added 1/3 of the dme early and the remaining 70% with 15min left in the boil.
-Mashed in way too high- the new kettle holds the temp steady so there was no drop. Mashed at 162 instead of 152, got it down to 152 for 35 mins then raised it to 162 for 15mins.
OG was supposed to be 1.070, mine was 1.042!!?? With two diff hydrometers WTF. Thats a huge miss HELP:(

what was the temp of the wort when you took your reading? And what temp is your hydrometer calibrated at? I thought mine was low until I realized my hydrometer was calibrated at 60 degrees. After making the adjustment, my OG was right back where it needed to be.

Just a suggestion.

Wort was right @ 70
 
Recipe? How long did you mash for? Did you do a conversion test?

I mashed for 10min at @162 (thought it would drop- but didn't) then got it down to 152 for 35min then up to 162 ish for 15min so @ 1hr in total...

I've never done a conversion test- just reading up on that now- when is it too late to do one?

Anything over 158 really produces a very unfermentable wort but I still need to see the recipe to give you any insight. Was your grain crushed/milled at all?

A starch/conversion test can be done at any time during the mash, but once mash out and denature the enzymes (168F) you can't do anything about it.

So am I going to have a 3.5% Alc 95IBU ale? lol

So you replaced all 14bs of 2-row with 3.15lbs of DME? You'd need 8.4lbs of DME to make up for 14lbs of grain. If that's the case you didn't actually mash anything you just steeped your specialty grains, the difference between mashing and steeping is that you use base grains to convert starch to sugar.

Yeah, if you only used 3.15 lbs of dme, you gravity is spot on with the specialty grains. You really needed much more sugars to make that beer.

My bad I didn't replace ALL the 2-row with the 3.15 of DME...

Was the grain crushed? If so how well was it crushed? Is this the most grain you've ever mashed with?

Did you do a full or partial boil? Looks like a partial boil from what you posted from Beer Tools. How well did you mix your top-up water with the wort?

Partial boil, the most grain I've ever used by far and I crushed it good as I thought I didn't enought in the past...

The 5.8 lbs of 2-row might have been "older" (father in laws) I'll confirm. I think it was @1yr old. That shouldn't effect my OG that much?

Can you post the exact amounts of everything you used? It still looks like something got lost in the conversion between AG and PM.

Here's exactly what I used:
5.8lbs 2-row
0.8lbs Cara-pils
0.8lbs Crystal 40
3.15lbs x light DME

I checked it last night and it looks like a very healthy fermentation so far- it blew off about 2 L in the first 48hours. No funny looking things in the carboy- yet. I actually tasted the blow-off liquid, and nothing seemed funky- tasted like flat Hop Stoopid (which is great).

I'll take a reading on day 7 to see where its at- but I have no idea what the OG was? So not sure what I'll do. Any suggestions?
