What to do with too much Vinegar taste?

If your starter is already very vinegary, is there a way to not get so much of that taste in your next brew?
 
Use less starter and ferment the next batch for less time. Taste it after 5 days and go from there.
 
Agreed, just drink it sooner. Every batch I've made has turned very acidic given enough time. The best use of extra acidic Kombucha is salad dressing.
I have actually used a SCOBY from Kombucha several times to make vinegar from juice wine and malt vinegar. It works very well.
