I have a recipe for what I am going to call "Mrs. Clause Christmas Ale".
I am in need of your input about what hops to use with this.

8# 2 row
2# Carafa I
4 oz. Chocolate malt
4 oz. Black Patent
8 oz. Carapils
1/2 cup molasses at flameout
1 tsp. cinnamon
1 tsp. ginger
1/4 tsp. nutmeg
1/2 tsp. cardamon
1 tsp orange peel
Yeast is WLP550 that I will wash from a Belgian Saison pumpkin ale

This will be a single mash.
The recipe calls for 1.5 oz. nugget and 1 oz. willamette.

I don't want to order any hops at this time.
Right now I have on hand the following hops in my freezer;
Cascade, Galena, Hallertau, Kent Goldings, Liberty, Mt. Hood, Saaz and Tettnang.

I am thinking of using 1/2 oz. Galena (13.1%) at 60 min, 1/2 oz. Hallertau (4.8%) at 30 min. and 1/4 oz Saaz (3.4%) at 15 min and flameout. This would give me about 30 IBU's which I believe will be good for this beer.
