I haven't done it yet, but EdWort's Bavarian Hefe from the recipe section is on my to-brew list and calls for a single 90-min mash @153.
 
I have done some before. I now, however, feel the acid rest really makes if difference in some of the character of the beer I'm looking for. They turned out fine. Good yeast and fully modified malt will do their thing nicely
 
I did one batch single step so far and it's an ok beer but quite one dimensional and not as good as the extract hefe's I've made. So, for this last one I did a double decoction. Still in the fermenter so I can't comment on the difference yet. However, the next I do will be a multi-step without the decoctions so I can compare the difference.
