What are the must have water test kits I should invest in for home brewing? I am using a 5 stage, Dual DI RO/DI water filter. My background is in keeping fish so I understand water chemistry, and really want to focus on water quality and chemistry with my brewing.
 
Well, if you have that kind of setup, I recommend getting a pH meter and reading up on the water chemistry articles. You are already starting with virtually no minerals, so you can ignore "fixing" your water, and focus on building it up from scratch, which is pretty simple! You also don't need any "testing" equipment other than the pH meter since your water is a known mineral composition and pH. The pH meter is only used to double check your calculations for additions.
