Hi, I have read a lot about 05 being a work horse, what I am experiencing is just so different than any other yeast I got to do a gut check. So I usually use nottingham yeast for ales and after day 2 it’s going nuts. This 05 is going just 1/4 speed. The brew temp is low( 62), gravity readings are dropping buts it seems slow going but steady. I am at day 7 and still chugging. Is this normal for 05?

Ok, will bring it up. So your thought (mine also) is slow ferm is mainly due to low temp?

without knowing what you are brewing we can't really help you with the limited info given.

US-05 is a solid yeast. Upper 60s is where you wanna be.

A single pack is all I use on my 14% RIS...but I let it work a month before I even check gravity.

I've used US-05 twice now. At 68 it was roaring away after 8 hours both times. Then bubbling stopped after 3-4 days.

I’m assuming everyone is referring to ambient temperature. The temperature of the wort is actually 3-4 degrees warmer than the air temperature. I just finished fermenting at 60 degrees ambient with great success
