This brew has the most steps of any brew I’ve attempted and uses several ingredients I haven’t experimented with before, so I am seeking advice

I am still debating how sweet I want this I may want to back sweeten it, this I probably wont know until I get a chance to taste it.

I am also contemplating making this carbonated, not sure if I want to mess with such or not

Unicorn blood

Ingredients:


  • 5lbs honey
  • 1.5 cup raspberry
  • 1.5 cup peaches (preferably white peaches if they are in season)
  • 1 gallon peach juice
  • 1 cup violets (Flavor and color)
  • 1 cup elder flowers (Flavor)
  • 1 cup butterfly pea buds (color)
  • 1.5 ginger
Recipe:

  • Blend and freeze peaches and raspberries
    • Use peach juice to clean out blender to minimize loss
  • Blend and freeze ginger
  • Mix 1 gallon peach juice and 4lbs honey in fermenter
  • Prep yeast in a mixture of peach juice and honey
    • Add yeast after its had 1hr to get going
  • Aerate
  • Measure SG
  • Add in frozen fruit in a brewing bag weighted with marbles.
    • Yes this will throw off the initial SG but I’m more concerned with having an initial value for confirming fermentation occurred than an exact ABV
  • Let ferment for 7 days
  • Remove fruit
  • Add 1lb honey
    • Stir enough to agitate the colony, mix in honey, and cause some light degassing but no cause aeration
    • Adding more honey here to extend the fermentation so its still fermenting while the ginger is in
  • Add ginger in a fermentation bag
  • Let ferment for 7 days
    • Test SG
  • Let ferment/rest for 7 days
    • Test SG
    • `Remove ginger
  • If the SG has not stabilized do not proceed till it has stabilized
  • Once SG has stabilized
    • Add violets and elder flower
  • Let steep for 7 days
    • Remove flowers
    • Add butterfly pea flowers
  • Let steep for 7 days
    • Check color, add more flowers if needed to get a desirable color
  • Once a desirable color is achieved let rest to clear
  • Before bottling add matching brew glitter
 
If you aren't going to be adding any water to this for at least a 2 gallon batch, the peach juice and honey alone will be very high even with only 3 lbs honey. Assuming the juice is roughly 1.04-5 area adding the honey is going to ballpark the sg around 1.14-1.17 depending on sugar levels. I haven't done anything with flowers but what about making a tea in a gallon of water with the flowers then add that to juice/pulp/honey. How strong is your Mead supposed to be?
 
Just realized this post was from March, did you try this recipe and if so how did it go?
