Too much to boil off?

So I flaked and doubled my starting water in my mash. I already have it in there and plan on to just boil off what I need to. Is this an issue? Would it change the flavor by brewing so long? I will calculate the time and add the hops at the right spots towards the end. Will I get maltodextrins or anything??

What volume did you end up mashing with? How many quarts of water per pound of grain?

If you're not much over 2 quarts/pound, you'd probably be fine to just subtract water out of the sparge water. If you're way over, you may have pH issues.
 
thats good. Why did you want to add so much more water to boil off? Do you normally end up boiling off too much?
