So I've got my first bacteria fermentation going. I brewed it sept 3rd, so we're pretty close to 3 months. It's being fermented with ecy bug county, plus some wood chips from a batch with ecy farmhouse Brett. Active fermentation is long over, and I'm starting to get some funky white rafty looking things on top. I intended to rack it months ago, but other brewing projects and life in General got in the way. I was really aiming for a Flanders red type brew, which is racked off the primary cake. Have I waited too long? Do the risks of racking now outweigh the benefits of doing so? What are the risks of racking this late, anyway?
