I made 3 batches on Friday and they are started fermenting on SAT
I am one happy camper

My LHBS person recommended that I wash the apples in water with 1/8 tsp potassium metabisulfite per 5 gal pail of buckets instead of putting in in the cider after pressing

1st batch
1 gal fresh pressed cider
1 cup DME
lalvin ec-1118
SG 1.062

2nd batch
1 gal fresh pressed cider
1/2 cup dark brown sugar
lalvin ec-1118
SG 1.068
I actually pressed this on Thur

3 gal fresh pressed cider
3 cups light brown sugar

Wow, that's great. Are you letting them ferment dry and back sweetening or are you planning on stopping fermentation a bit early to keep some sweetness? I really want to try to make cider with DME. I haven't yet and only just learned of it the other night.
 
It depends on how much they ferment out.

my original plan was to back sweeten with a concentrate from my cider by freezing it but I may be running out of cider sooner then I thought.
The kids drink it like water :)
