Texas Two-step for 12 gallon carboy

Im not there yet but I plan to start all grain brewing by spring. I have a 12 gallon pyrex carboy im dying to use. I also plan to make a water cooler type mash tun.

Can I do one 5 gallon batch, cool, pitch yeast from starter, finish next 5 gallon batch, cool and add to carboy with 1st 5 gallon batch?

I searched and read few about doing this with extract brewing but none discussing all grain.

Thoughts? Thank you!

You can , but obviously be careful moving all that weight around. That a lot of weight to be in glass.

I never plan on moving the carboy due to the weight.
