Sultry

This is a very complex and unusual mead. The ingredients don’t seem like they would go together initially, but wow do they! It smells amazing the second you put it together.

Sultry: 3 gallon batch

1. Bring 1 gallon of water to a boil. Cut heat and add the following:
-Hibiscus flowers (1.5 cup)
-Dried fig (1 lb 10 oz), chopped
-Dates (8 oz), pitted and chopped
-12 Medium Toast Hungarian Oak Cubes
2. Allow to cool to less than 140 F.
3. Add Vinter’s Harvest Black currant (96 oz) concentrate.
4. Add 8 lbs of Huajillo honey and mix.
5. Add a brew bag to the carboy and pour in tea from Step 1. Tie the bag. Use the bucket lid to hold it up.
6. Add 1/2 tsp Potassium Carbonate.
7. Add 2.4 tsp Fermaid O and 1.2 tsp Fermaid K; add Fermaid O again at Day 2.
8. Mix well and pitch starter of Wyeast 1388.
9. Once the gravity is stable, remove the fruit bag.
10. Add 3 vanilla beans, 3 Xoaker Medium Plus American Oak and 3 ml Toasted Oak Liquid Tannin - Vanilla. Age for 3 months.
11. Clear and bottle.

I’ve been wanting to do something with hibiscus, and I have dates, figs, and black currant concentrate already. I might have to add this to the list.
