I messed up on my grain bill order and only order 8 oz instead of 12 oz of crystal 75l. I have some malto-dextrin on hand. Can I substitute some malto-dextrin for the crystal to get close? How much should I put in? Maybe like 1.5 oz since it won't ferment out any?

8oz of crystal 75 would not give you much more than 1 point of residual gravity in a 5gal batch, so as previously stated, just leave it as is, whithout the dextrin.

If you have more grain on hand (is this extract, partial mash or all grain?) then just add a bit more to offset the 4oz of C75 you won't have. Or, as already mentioned, just brew it as it sits and not worry about it. IMO 4oz of C75 less won't make a huge impact on the brew. Well, at least without knowing what the rest of the recipe is...
