I made a starter last Friday night with 12 cups of water, 3 cups light DME and a vial of WLP530. I'm pretty sure it's done fermenting, and I plan on putting it in the fridge when I get home from work tonight.
I had an insufficient ice bath and it took about 30 minutes to finally get it down to 80 degrees. The whole time it was cooling down the pot was lidless and open. What is the likelihood of contamination?
Also, this is the only starter I can make with this yeast. I need the rest of my DME for the brew this upcoming Friday. Will this starter be good enough?
