Since my attempt at the Caramel Apple Pie cider seems to have worked out well, I decided to give BlainD's Unicorn Blood a try...

4lb Clover honey
2.75 qt Apple juice
1 qt Black Cherry juice
.5 cup corn sugar.
1 cinnamon stick

Starting Gravity is 1.052 .
My hope is to bring it down below 1.00 and then cold crash + Campden to stop the yeasties so I can back sweeten with cherry juice and bottle still.

Sound like a plan?

72 hours after pitching and it's already down to 1.004! It was extremely active and actually blew the airlock on the first night. Think this one is going to sit in the bottles for a while.
 
I've had good results with ~1 tsp of off-brand Splenda per pint added in the cup or altogether at once in the keg.

Definitely test it on the small scale first to see if you like it.
