I have a bochet that seems to be stalled and I could use some help. Stats below
Started: 11-18-12
Yeast: EC-11118
SG: 1.170 (yeah, I know REALLY high)
Volume: 1 US gallon
Just added 5lbs costco honey burnt to black and 1/2 tsp yeast nutrient.
Added a second yeast packet after one day when no fermentation was visible at all. I think my water for re hydrating the first packet was too hot and killed the yeast. Fermentation got underway after that. Five days later I added another half tsp of nutrient, and another half a week after that. Regularly swirling the whole time to degas.
It has been pretty calm for about a week, today got a gravity of 1.060. I added more nutrient, about two dozen rasins and degassed. Thinking it is stalled, as EC-1118 should have taken it down a lot lower. According to my hydrometer it's at about 8.5% ABV, and I should have gotten near another 10% ABV out of this yeast.
Any thoughts or suggestions?
