So I'm brewing a big RIS (O.G. 1.103, yikes) and have stepped up my yeast and plan on brewing in a few days. I typically wash my yeast and store in fridge and this works great. However I don't like washing anything above 7-8% due to possible stress; just doesn't seem worth the possible negative of having bad yeast.

My question is...does anyone step up their starters a little bit more, and split it and save a portion of the yeast prior to pitching? This seems like a very rudimentary question but I haven't really read anyone doing this and my search came up rocks. Any input? Any side effects?

Cheers
Kyle
