The goal here was a light, sparkling pineapple wine with a (relatively) low alcohol content.
For a five gallon batch...

15 big cans of Dole pineapple juice
5 g Red Star Pasteur Cuevee
1 T CaCO3
1 T Fermax

12 days later...
Racked to bottling bucket and back into fermenter
Added 1/2 c bentonite slurry

5 days later...
racked to bottling bucket
Added 1/2 c dextrose
bottled

14 days later...
drank it

good stuff

I'm going to try this, but I think I'll stick it in the corny keg and have it on tap.

Thanks for the interesting recipe!

I started a 1 gallon test batch last night and added the following:

3 big cans Dole Pineapple Juice
1g Red Star Premier Blanc
1/4tsp GoFerm
1tsp Fermaid K
1/2tsp Wine Tannn

Initial gravity- 1.060
pH- 3.91


ProfBoff, what were the gravity readings when you racked and then bottled? Any further details are greatly appreciated!
