How difficult is it to convert a brand new single tap edgestar keg, to a dual tap? Is it worth it to buy a single and upgrade the tap or just start with the dual?

You would have to replace the tower. Keg Connection sells 2-tap towers for $110-$120.
You would also need to split your gas line. That's going to run about $25 plus whatever connection you use.
