Hey guys,

I am currently brewing a Northern English Brown Ale with Wyeast 1098 (British Ale). I am looking to cycle another beer with a cup of that east and thought of an IPA. I'm looking for a robust, fragrant hop schedule for my next batch.

Here is the hop schedule I really like in an APA sold by the LHBS (6 Gal, 7# pale LME, 2.5# wheat DME, 1/4# Crystal 10L, 1/4# Cara-pils, 1/2# Crystal 45L)
45g Chinook, 15 Cascade, 45 Centennial at 60
30g Cascade at 10
15g Chinook, 15 Cascade, 15 Centennial DRY HOP

So for the next batch I will be using Wyeast British Ale yeast, about 4.4kg light LME (almost 10#), with whatever grain and hops schedule you have in mind. I have access to a lot of honey (my father in law is a bee-keeper).

Here's the schedule I used on an Imperial IPA I made recently. I dry hopped with about 1oz of mixed hops I had left over. It's for a 90 minute boil @ 100 IBUs and it has a smooth, hoppy citrus character to it:

0.50 oz Chinook [11.40 %] - Mash 85.0 min
0.50 oz Galena [13.20 %] - Mash 85.0 min
0.50 oz Galena [13.20 %] - Boil 81.0 min
0.50 oz Galena [13.20 %] - Boil 72.0 min
0.25 oz Chinook [11.40 %] - Boil 63.0 min
0.25 oz Chinook [11.40 %] - Boil 54.0 min
0.50 oz Sovereign [5.50 %] - Boil 45.0 min
0.50 oz Sovereign [5.50 %] - Boil 36.0 min
0.50 oz Willamette [5.50 %] - Boil 27.0 min
0.50 oz Willamette [5.50 %] - Boil 18.0 min
0.50 oz Citra [12.00 %] - Boil 9.0 min
0.50 oz Citra [12.00 %] - Boil 0.0 min

I'm a bit of a hophead, but here's my hop schedule for my pale ale for a 5 gallon brew:

1.5 oz Northern Brewer at 60 min.
1.5 oz. Columbus at 15 min.
1.5 oz. Cascade at 15 min.
1.5 oz. US Golding at 15 min.
.75 oz. Cascade for dry hopping in the secondary
.75 oz. Columbus for dry hopping in the secondary

I have IPA coming up that will be lower on the IBUs and close to the lower range in alcohol for the style. My goal for this is to be a smooth very floral brew like a Bells 2 Hearted. I haven't used Falconers Flight but I've heard great things about it so I'm going to use it with this brew. I love Citra and Amarillo so I'm going to use them as well. Also I have good experience dry hopping with small amounts of hops in the keg, I'm assuming that with the keg sealed it retains a bit more aroma than in a fermenter with an airlock.

Hops will be:
1 oz Falconers Flight 60 min
.5 oz Citra 60 min
.5 oz Amarillo 15 min
.5 oz Falconers Flight 10 min
.75 oz Citra 5 min
.5 oz Amarillo 5 min

.5 oz Falconers Flight dry hop in keg. Will add after beer conditions and leave in for 3-4 days.

I just bottled this one. TBD on results...

I love it! These look like some real hop bombs. I don't think my LHBS has Falconer's Flight but it has everything else. Keep them coming!

Here is a recipe I just brewed for the first time last week, using some free Bravo and Zythos hop samples I got from a brewer friend of mine as well as homegrown Cascade and Centennial from the freezer. I haven't come up with a good name yet, but my 6 year old says I should call it "Mr. Zips Hop Monster"... not sure why, but I like it :)

OG 1.078, 102 IBU's

9.150 lb Briess LME - Golden Light
1.500 lb Corn Sugar (Dextrose)
8.000 oz Caramel/Crystal Malt - 10L
8.000 oz Briess DME - Golden Light

60.000 min - 1.250 oz Bravo
30.000 min - 0.500 oz Zythos
20.000 min - 2.000 oz Cascade
15.000 min - 1.000 oz Zythos
10.000 min - 1.000 oz Cascade
2.000 min - 0.750 oz Centennial
Flameout : 1.500 oz Zythos, 1.000 oz Cascade
Hop Steep for 10 min.

Dry Hop after fermentation for 7-10 days: 1 oz Zythos, 1 oz Centennial, 1 oz Columbus

I can't wait to taste this one, it smells delicious already.. Cheapest IIPA ever, considering the hops were all free!
