i see a few cooling plates around here, and a while back a buddy was a brewer (way back - Navy times) and he legged his brews and used a chill plate to serve.

So - after kegging and cooling for a bit, can I pull the kegs out of a cooler and run the tap through a chiller to serve?
 
That's pretty much what cold plates are used for, though typically they're used in more challenging environments than a household...

So that was a poorly worded question - sorry. More precisely, this is the question;

After cooling a keg for 24 hrs or so, can I Return it to room temp for storage, and serve with a cold plate to chill, or should I keep kegs refrigerated?
 
Certainly keeping kegs chilled and dispensing them at serving temperature is less finicky than dealing with warm kegs and cold plates, but you could go either way.
Dealer's choice...
