Im splitting a 5 gallon batch of russian imperial stout into 2 2.5 gallons.

I know I'm going bourbon for one of them trying to think of something unique for the other.
the only other info to keep in mind is, I added star anise at end of boil.

You don't want any headspace in a secondary fermenter due to oxygen exposure. Do you have two 2.5g vessels?

Yes I do. Actually a 3 gallon an 2 1 gallons. So I'll be getting rid of some beer.

well, you could always do a 3 gallon secondary and a 2 gallon- I wouldn't throw out beer if I could avoid it.
