Yeah all about beer published a recipe a year or two ago. I think I still have it although I never made it. I'll check my laptop tomorrow and try to post it up.

5 gallon recipe:

Grist:
5 lb pilsner malt
2 lb munich malt
2lb flaked wheat
1lb carafa III

Single infusion mash at 161.4F to 150F mash for 60 minutes, batch sparge

60 minute boil

Boil additions:

1.25oz Pearle (8%) at 60
0.50oz Saaz (4%) at 10

Ferment with kolsch yeast, european ale yeast, or neutral American strain

OG: 1.054
FG: 1.016
SRM: 37.8
IBUs 37.7
ABV: 4.98

Not quite a dunkelweizen recipe with carafa but fairly close.

Did anyone ever give this recipe a bash?

I enjoyed a nice kapuziner schwarz-weizen with my dad last night and would like to clone / make something of similar style

I have brewed 3 10 gallon batches of the below recipe. I split the fist 10 gallons in half and pitched two different yeasts (3638, 3333). The 3638 was a bit to fruity for my pallet. It's a great summer session beer for people who crave a darker beer in the hot summer months.

Recipe:

Eff: 75%

5.62 lbs Wheat Malt
1.75 lbs Pilsner 2 row
1 lb Munich Malt
.65 lbs Carafa 2
.5 lbs Wheat Flaked

1oz Tettnang @ 60. Min

Does any one care to shed some light on a potential carbonation level to target?

Mr.Malty is showing somewhere are 4 volumes for dunkles & hefes

I've never bottle carbed anything up that high, I presume bottles can take it.

I'm very pleased with the recipe! Slight roastyness but still light and refreshing

Thanks!

Glad to hear it turned out well. I have 15 gallons of it fermenting as we speak. One of my favorite spring/summer session beers.
