Saison recipe - yay or nay?

8 lb pilsner
2 lb white wheat
8 oz Vienna
4 oz flaked barley
2 oz special b

1 lb table sugar

1oz Willamette or saaz @ 60
1oz Willamette or saaz @ 30

Wlp566 w/ a big starter

Single infusion mash @ 150

Its a 5.5 gallon recipe. IBU around 30.

I'm not sure if I should use Willamette or saaz and if I should bump the IBU a bit? Also I tossed in a little special b for a hint of raison and to darken the color, but I don't know how that will taste?

Any opinions? I plan to brew this tomorrow my starter is cold crashing now.

Hey guys sorry to bump the thread just looking for opinions on special b in a saison and which hops to use...

I want to crush my grains and get stuff ready for tomorrow but I'm still not 100% on the recipe and its giving me anxiety!

Go with the Saaz...either will work, but I tend to favor the noble hop in my Saisons. The recipe looks fine, the beauty of Saisons is that you can have a lot of variations. IMHO I would drop the flaked barley though and if you want to keep the gravity add it back as wheat. I also mash mine at 146-148 to help dry it out.
