About a month ago I decided to brew this recipe as a holiday gift: Saison Du Mont

After 1 week in the primary and 2 weeks in the secondary I sampled the beer while bottling and it tasted pretty good, had a nice banana flavor to it. But fast forward 2 weeks to last night when I cracked a bottle open, the beer tasted bitter, like chewing on a pill, and there was no sign of the previous banana taste that was present before bottling. I made 2 changes to the recipe above, first I used 1 lb of honey instead of 1/2 lb to get a higher ABV%, second I used a Whirlfloc tablet instead of Irish Moss.

OG: 1.060
FG: 1.010

My question is what went wrong? Am I just cracking it open too soon, or did I add too much honey? Or is it possibly the whirlfloc tablet that messed things up?
