Safale T58 is a winner

We brewed a modest gravity beer and let it sit in the primary without racking. The initial sample taster was young but good. I will use this in the future.

We had temperature spikes but everything about it came across as an American Style Belgian beer.

Can you define an "american style belgian" for us?

I was thinking the same thing. Maybe he meant Belgian style American beer. Whatever that is. I guess we can be sure that it's not an English style German beer.
