I am always cruising Northern Brewer's and Austin HBS's websites for ideas but buy all my stuff locally, I REALLY want to do the Rye Stout I saw on NB's website. How can I make this beer without using their Rye Malt extract...any ideas? I am planning on brewing this evening.

What I went with was 2lbs Rye, 1/2lb Chocolate Rye, 1/2lb Kiln Black, 1/2lb of Caramel 120. Should be interesting - my house smells FANTASTIC right now.

WOW!!! Sounds good, but with 1 lb of 120 (which I wouldn't call "caramel") it will be awfully raisiny.

I use c120 in my stout recipe and you can't pick up any raisin flavors like you would think. I guess it blends better with the chocolate and roasted malts.

example:
10lb maris otter
1lb c120
1lb choc
1lb flaked barley
.5lb roasted barley
