Please let me know what you think!

I always like to add yeast to my beer. ;)

More dry hops might be nice. Maybe some at flameout too.

+1

I don't think the white wheat or carapils are needed. The rye and C60 will do the same as those, so they're just kinda excess. don't forget rice hulls unless you're doing biab

How about 1oz Willamette at flameout and +1oz Willamette dry hop? I'm thinking Willamette because it is described as "Aroma - mild & pleasant, slightly spicy" that I am hoping will go well with the rye.

I was thinking the carapils to help with head retention and the wheat to possibly add to the malt complexity?

willy usually pairs well with cascade so that should work fine.

theres nothing wrong with keeping it, but 5% wheat isn't gunna add a whole lot beyond head retention. with 1lb C60 and all that rye, I don't think the carapils is gunna add anymore head retention. both of those already add to it, and so don't hops.

Brewed this earlier today, I did a double crush on the grain because I am doing BIAB with double batch sparge, ended up over estimating boil-off and got about 6.5 gallons post-boil of 1.073 wort. The color came out nice! A nice red/brown hue, very strong hop aroma. Poured it on a S-05 yeast cake and hooked up a blow-off tube. Can't wait to taste it! :mug:

Just took the hydrometer sample, came in at 8.75%. Tastes smooth with a good amount of bitterness. It is now in the secondary with 1oz williamette and 1oz cascade.

Transferred to the keg today, has a very nice spicyness to it. Yum, can't wait till this is carbed and cooled! Will post beer porn when the time comes :mug:

Update: The keg just kicked! Once it balanced out (9-10 days in the keg) this beer was great! The bitterness was right where I wanted it, good hop aroma but I would like a little more next time. The head retention was rock solid.

I shared quite a bit with friends and family and have only received rave reviews. I will definitely be brewing this one again soon. The changes I plan to make are probably another oz of williamette at flameout and dryhop. Might bump up the SRM slightly so it is comparable to my favorite: hop rod rye. Also considering what a Belgian yeast could add to it.

I'm brewing this one up again. This time I am moving the first 2oz of bravo to FWH and going to up the aroma addition.
