So my Indian Brown was in the primary for at 68 degrees for 3 weeks, I then dry hop it for 5 days and bring the carboy upstairs where it's 80 degrees think I would bottle the next day (today).
I wake up and look at the carboy and it is bubbling away at a rate of 1 every 7 seconds (I know I know) and looking inside the carboy I see a lot of activity.
After a month?????
I know shaking the secondary can release some CO2 but this looks like real fermentation.
it's always something isn't it.
