Roasted coconut for flavoring sucks!!!

Okay, sometimes you get good info on the net, sometimes not. I read a few threads in this forum on using roasted unsweetened coconut in beer for a coconut flavor addition.
Well, I tried it. I toasted 1 lb. of coconut and put it in my secondary for 2 weeks for my "Lemon coconut cream-ale". Just cracked open my first bottle. I can taste the lemon....but absolutely NO coconut flavor at all!! @#$&

So, I'm back to looking at liquid extracts for coconut flavor. They are MUCH cheaper than the coconut anyway.
 
I use 2lb of unsweetend coconut in a porter and it turned out amazing!
I have never had any bad results using coconut.
Perhaps the lemon is overpowering the coconut, or you are not toasting it long enough? I have never had any bad results using coconut.
