Recipe scaling help?

So basically what I'm trying to do is take the Irish Mead recipe by City Steading Brews and adjust it to a 5 gallon recipe. My problem comes in with the heather tips, lemon zest, and elderflower, which I know PROBABLY shouldn't just be multiplied by 5. I tried pulling up Beersmith, but it doesn't know what any of those ingredients are, so that's not much help. The honey, water and raisins are easy but any advice on how to scale the Elder Flowers, lemon zest and heather tips would be really appreciated.

The 1 Gallon recipe calls for

3.5 lbs Wildflower Honey
2 ounces Raisins
1 ounce (28 grams) Dried Elder Flowers
1/2 ounce (14 grams) Heather Tips
Zest of half a Lemon
Water to fill to 1 Gallon
I packet of Lalvin 71B
1/2 teaspoon Yeast Hulls

I would recommend scaling all of those ingredients proportionally. Is there some reason you think you shouldn't?
