Brewing a Beer for a contest and looking to make something different. Id like to brew an Amber/Red Ale but with some honey malt. Here is the recipe that I have been working on. Any critiques or thoughts would be greatly appreciated.

Est. FG 1.016
Est. Abv: 5.1%
IBU: 54
SRM: 12.1

9 lbs Pale Malt (2 Row) US (Briess) (2.0 SRM) 75.4 %
1 lbs 3.0 oz Caramunich Malt (56.0 SRM) 9.9 %
1 lbs 3.0 oz Munich 20L (Briess) (20.0 SRM) 9.9 %
9.0 oz Honey Malt (Gambrinus) (25.0 SRM) 4.7 %

1.00 oz Centennial [8.50 %] - Boil 60.0 min 28.4 IBUs
1.00 oz Centennial [8.50 %] - Boil 10.0 min 10.3 IBUs
1.00 oz Galaxy [14.20 %] - Boil 5.0 min 9.5 IBUs
1.00 oz Galaxy [14.20 %] - Steep/Whirlpool 30.0 min Hop 9 6.2 IBUs

Northwest Ale (Wyeast Labs #1332)

1.50 oz Centennial [8.50 %] - Dry Hop 5.0 Days Hop 0.0 IBUs
1.50 oz Galaxy [14.20 %] - Dry Hop 5.0 Days Hop 0.0 IBUs

I prefer Centennial for finishing, galaxy is less stable and the aroma will get worse during time: I'd use it for bittering
