We were at the White Labs tasting room (very fun) in August and really enjoyed the yeast character that the 568 blend created in one of their saisons. Thus, I tried a vial with this recipe. My first taste, after a week in primary and a week in secondary, was somewhat disappointing. It fermented around 75 degrees with a heat-wrap with a big starter. I'm still early in formulating recipes, and don't have a great handle on mash efficiencies yet, so please pick away at what I tried below:
