i guess this belongs in general techniques, if not my bad. i was just wandering if brewers with larger brew kettles (think 3bbl) do their boil with the lid on. how could they get away with all the steam if you operating in, say, a brewpub?
 
It's my understanding that the kettles have an exhaust sytem to release the steam in the top.
