I am thinking to do a quick Berliner Weisse, any solid recipe that turn out quick ?

This would be my first sour, I was under the impression that the lacto is fermenting this beer yet I see lots of recipe using yeast. For my understanding do they sour first then they ferment it to make sure doesnt get too sour ?

If I really wanted a quick BW, I'd use about 1 lb of acid malt in the last 20 mins of the mash. Some on here say the sour malt doesn't have the complexity of using lacto bugs, but I'm not sure I would be able to taste the difference. :mug:
 
I really recommend checking out the pinned post here about modern souring methods. You can get beers like this in normal timeframe for clean beers.
