I brewed a heather ale last Friday. I used fresh heather. I did not notice a great deal of floral smell and am looking for assurance from those who have brewed a similar ale.

Leann an lus liath Fraoch
1 cup sugar carmalized (a little color)
8 oz Victory Malt
8 oz Golden Promise
3 lbs. Muntons amber DME
3.52 lbs John Bull light LME
1/2 oz Fuggles (60 min)
3 cups fresh heather tips (45 min)
2 cups fresh heather (15 min)
1 cup fresh lavender leaves (15 min)
1/2 oz Kent Goldings (15 min)
1 tsp Irish Moss (15 min)
1 cup fresh heather (5 min)
White Labs Edinburgh Scottish Ale WLP0028

Smells great from the airlock. I will either rack this to the secondary Thanksgiving day or Tuesday the 29th. (need the yeast cake for next brew)
My questions are: does this sound like enough heather? I have some dried lavender I can rack onto in the secondary, but do I really want to do that?

Good question. I'd like to know too. I'm interested in brewing a Fraoch but haven't found much info on it. One recipe I saw called for 3 lbs of heather. That seemed too much to me.

Please post your findings here.

It's actually developing a nice floral nose as it ferments. I'm not sure if it's the WL Edenburgh yeast, the heather of the lavender, but I like it. I had considered "dry hopping" some more heather or lavender, but I really don't want that mess in my carboy.
Tuesday I transfer to secondary & brew my Clan Campbell Scottish Ale. (need that yeast cake!) :D
