I'm about at the stage where I'm ready to rack my first two batches of mead. The problem is that I know when I rack I'm going to end up with a fair bit of headspace and a large surface area. From what people have said, this can lead to flavour problems and other issues. The thing is, I don't have any containers right now which will be suitable for the volumes I have while minimising headspace. Can someone please let me know what the potential problems are and how I can avoid them? Or am I worrying over nothing?

You will oxidise your mead and this will be a dumper.

Just leave it as it is, if the primary vessel is air tight, there's absolutely zero reason for moving to another vessel.

There is about one of two yeast strains that are problematic when kept too long, but the chances that you got one of them are almost zero.

No "secondary", leave it till cleared completely and then bottle it.
