Question about large batch fermentation practices...

So I was touring Rogue last week. (Great time.) And they have an 8000 gallon fermenter. The guide says it takes them 4 brew cycles to fill it.

I wanted to ask (but didn't get a chance) if they wait to pitch the yeast until after all the beer is in the tank or if they pitch progressively with each batch they add to the fermenter.

Anybody know how they do that in the big leagues? Just curious. I don't have the kind of long green to purchase a fermenter that exceeds my current batch capacity.

Ok, from reading other threads, it looks like the consensus is that a guy can let the wort sit for say 12 to 24 hours if the cleaning and sanitizing processes are rock solid.

I just wasn't sure if Rogue is progressively pitching or waiting and pitching all at once.
