I'm considering building an electric kettle and a immersion circulator for sous vide. Would I be able to get away with using this? What heating elements would you suggest?

From what I've seen on Iron Chef, that probably wouldn't work for what you want to do. You use an immersion circulator to cook food in the water, but if you are warming up water with it, you'd have this big bulky thing hanging off your kettle. You may want to check out the heatstick or something similar. A little more compact and moveable. Especially on brew day when sometimes you need to move quick!

Wait, you're talking about using it for beer right, cuz the sous vide thread is over on cooking.com

yeah.. a little confused. If you are going for sous vide cooking, then build exactly what is on that page you linked to.

If you're looking for a brewing application, things get different.
