Question about bottle aging and how it affects flavor.

I just bottled my Belgian beer yesterday. It is a clone of Gulden Daak, a very strong ale of around 11% ABV. Before I bottled it, I took a few sips. Not bad, but it had a sort of bitter taste. So my question is does bottling beer like this tend to mellow out after sitting for awhile? I've read many recipes that suggest letting Belgian beer age for 4-6 months.
 
Yes, the longer the more the flavors have time to meld and harsh flavors will subside. Your beer is green and will need more time.

Patience is a (brewing) virtue my friend.
 
yep, aging varies on style, and especially the ABV.

but every beer has a peak drinking time where its nice and mellow and all the flavors are in harmony.

eventually all beer loses flavor, goes stale, gets old...etc. takes a while though.
