Have the stuff to make "Northy 12" quad from Midwest/Northern Brewer, which is -
9 lbs Belgian Pilsen malt
7 lbs Belgian Pale malt
1 oz Brewer’s Gold (60 min)
1 oz Hallertau (30 min)
1 oz Styrian Goldings (15 min)
2 lbs D-180 Candi Syrup (15 min)

Was wondering if subbing a little melanoidin for one of the other grains would be worth a try?

What are your goals? Are you looking for something a little "maltier" than the original recipe would make? If so, then sure. OTOH, if you don't know or haven't tasted the "as is" recipe, you'd be shooting in the dark.
