Brewed a Belgian Wit today, and went for a protein rest. I usually do a single temperature infusion, but went with a protein rest to see if it would improve my efficiency. I was hitting low 70%, and today rocked an 85% efficiency. I know there has been threads about this, but I just want say that protein rests work wonders. :)
 
I have also had good success with a protein rest in my wit beers. I'll even go so far as to say that in a beer with 30% or more flaked wheat, its asking for trouble not to do one.
 
I'm convinced of doing a protein rest for the rest of my brewing days.
