POG Saison - passionfruit orange and guava

I looked around for a good treatment of guava's. Nothing really stood out to me. Thanks to a flourishing San Diego garden, this is how I'm gonna use all this fruit.

5 lb Belgian - Pilsner
2.5 lb Flaked Wheat
1 lb Vienna
0.5 lb Flaked Rye
0.2 lb Acidulated Malt

Mash at 152 Fuggle to 25 IBU. 1oz at 60, 0.5oz at 15min and 0.5oz at 5min

Wyeast 3711. Pitch at 66F. Hold at 72F

After 1 week Ferm: 10 lbs of fresh Guava's off the tree.
0.5 lbs fresh passion fruit pulp off the vine Orange zest of 1 big ass orange. (I'll simmer at 150 for 15 minutes for sanitation)

Keg on Day 14.

That's the plan, open to suggestions and feedback. Pictures to follow.
 
Interesting. POG juice is something I enjoy when Im in HI . . . as a saison that could be somewhat tasty.
