Does anyone have a recent or updated Pliny the Elder clone with Amarillo?

Neither the MoreBeer kit or Zymurgy (Double IPA / Vinnie's PTE recipe) reference Amarillo; the website however does.

Based on interviews, Vinnie cited using hop extract for bittering and pelletized hops from the 30 minute through dry hop. I would like to know where and how much Amarillo do use.

IPA recipes often vary based on the availability of different hop varieties. If you want to add Amarillo into a recipe, you could add it on top of everything else, replace another hop from the recipe, or reduce other hop weights to make way for the Amarillo. It's all up to you. In a DIPA with as complex a hop schedule as Pliny, it will probably be a very subtle difference anyway unless you make some big changes to accommodate the Amarillo.

brick_haus - do you have your recipe in Beersmith? If yes, please post the file, if no, please post the recipe. :D

I have the real Pliny recipe from a friend that works for RR. Amarillo is used at 45 and at or near flameout. And also in dh. I think it's used in equal amounts as centennial for the aroma additions. Hope that helps ya.

So what's the "real" recipe?

What IBU are you all getting if you plug the online recipe into BeerSmith?

And yeah, you can't just lick the tip and walk away. Where's that recipe??

Vinnie was dickish to me when I met him a couple years ago so I don't feel bad posting this.

This will be good practice scaling down a recipe for most of you. Good luck and post your 5 or 10 gallon recipes so the rest of use don't have to do any math.

Let me know if you can't read anything.

Cheers happy brewing.

I use Amarllo in my PTE clone as per Vinnies recipe.

First try, I rounded the numbers to make it easier. I guessed around a 1450 gallon batch size and converted to 5.5 gallon. The hop extract makes it tough too:

12 lbs 8.0 oz Pale Malt (2 Row) US (2.0 SRM) 1 89.3 %
1 lbs Caramel/Crystal Malt - 60L (60.0 SRM) 2 7.1 %
8.0 oz Corn Sugar (Dextrose) (0.0 SRM) 3 3.6 %
0.50 oz Columbus [15.50 %] - Boil 90.0 min 4 25.9 IBUs
0.25 oz Warrior [15.00 %] - Boil 90.0 min 5 12.5 IBUs
0.25 oz Amarillo [9.20 %] - Boil 45.0 min 6 6.6 IBUs
1.00 oz Simcoe [13.00 %] - Boil 30.0 min 7 31.2 IBUs
1.00 oz Amarillo [9.20 %] - Steep/Whirlpool 0.0 min 8 0.0 IBUs
1.00 oz Cascade [5.50 %] - Steep/Whirlpool 0.0 min 9 0.0 IBUs
1.00 oz Centennial [10.00 %] - Steep/Whirlpool 0.0 min 10 0.0 IBUs
1.00 oz Simcoe [13.00 %] - Steep/Whirlpool 0.0 min 11 0.0 IBUs
1.00 oz Cascade [5.50 %] - Dry Hop 5.0 Days 12 0.0 IBUs
1.00 oz Simcoe [13.00 %] - Dry Hop 5.0 Days 13 0.0 IBUs
0.50 oz Columbus [15.50 %] - Dry Hop 5.0 Days 14 0.0 IBUs
1.00 oz Cascade [5.50 %] - Dry Hop 3.0 Days 15 0.0 IBUs
1.00 oz Simcoe [13.00 %] - Dry Hop 3.0 Days 16 0.0 IBUs
0.50 oz Amarillo [9.20 %] - Dry Hop 3.0 Days 17 0.0 IBUs
0.50 oz Columbus [15.50 %] - Dry Hop 3.0 Days 18 0.0 IBUs

1.071 OG, 76 IBUs, 9.5 SRM

Mash temp I can't figure out because of the estimated FG I am getting in BeerSmith. 148F mash with US-05 gets to 1.009 (2.45) but their mash temp says 154F.
I also don't know how long they whirlpool for and at what temp.

elpenoso - THANK YOU - THANK YOU - THANK YOU.

Please post the real photo when you have a chance.

thanks for posting the update elpeneso.

Thw recipe has changed over time. You can email Vinnie too. I don't think it is any secret, as Vinnie handed out the PtE recipe, scaled to homebrew size, in 2005 at the NHC. As someone mentioned, hops will change with availability.
I have seen the handout on the web. here is a mock up of it.

The screenshot is a hard to read. Please clarify the following:

Malt:
• 2-Row: 3850 or 1850 pounds?
• C-60: 65 pounds?

Charge Hops:
• Warrior Extract: 3500, 2500, or 1500 grams AA?
• Whirlpool hops: 15 pounds each?

Dry Hop 1:
• Day what?
• Simcoe: 22.5 pounds
• Cascade: 17.5 pounds
• Tomahawk: 10 pounds

Dry Hop 2
• Day what?
• Simcoe: 20 pounds
• Cascade: 15 pounds
• Tomahawk: 7.5 pounds
• Amarillo: 7.5 pounds

Misc.:
• Dilute 134 gallons?
• 200 grams of what directly in the kettle at how many minutes?

Thank you brother!

Can someone explain the dry hop regiment? Day 8 and day 11 per turn?

What is the line between BOIL START and BOIL END? Kettle something ...

If I understand, the target size is 2015 gallons (65*31)?

I thought RR is a 4 vessel 50 BBL brew house?

Yup, kettle volume is 2015. Chiller volume was 2050, WP volume 2031. 65.51 BBL or 2031 into the fermenter.

Somewhere, the brewer diluted w/134 gallons (see WHIRLPOOL PROGRAM line).

1.074 og

Looks like they diluted before whirlpool because the volume went up after the boil?

If I'm reading the brew sheet correctly, I'm surprised by the equal amounts of Gypsum and CaCl. 3# of each. You'd think the Gypsum would be higher (3X+) than the CaCl for a world class DIPA. I guess not!
